When Steve sits at the bar, the first thing he gets is a cupcake with red, white and blue frosting and Happy 95th Birthday!.

"Yeah, yeah," he says in a good-natured tone, because even he has given up trying to keep track of how old he is. Twenty-eight, ninety-five, two? Ninety-five is probably the most accurate.

The second thing he gets is a napkin: Want to bartend today?

Yes. Yes, he does. The Big Book of Drinks even has a patriotic section.

"I know the bar has it," Dr. Lecter says. "Miss Seddon served it to me before. I take it you don't feel like 95 at all?"

"Sometimes I'm a very grumpy old man," Steve admits as he works the cork out of the bottle. "Sometimes I don't feel a day over twenty-five."

The cork pops out and he pours Hannibal a glass.

"The grumpiness may be due to things having changed so much over the course of your lifetime," Dr. Lecter says, picking up the glass. "Happy birthday to you, and a good Fourth of July!"

He drinks.

"Yes, it's definitely that," says Steve.

"Thank you! I hope it's a good day for you, too."

"I'm not American born," Dr. Lecter says, "but I mus honestly say I am quite grateful for the opportunities your country afforded me. And of course, I'm glad about any excuse for a good barbecue."

"I'm hoping to cook up some burgers tonight, myself.

"Where are you from, originally?"

"Lithuania," Dr. Lecter says. "But I left when I was still quite young. It wasn't a good place to be in Soviet times."

"I've read about that," Steve says. "It sounds like life didn't improve in a lot of places after the war."

"Not east of the Iron Curtain," Dr. Lecter says. "Not much. Of course nothing compares to the Nazis in methodical, intentional evil. The Soviets didn't kill you on purpose as much as they didn't bother keeping you alive."

"Yeah, I remember that," Steve murmurs.

"Not something we should be talking about today," Dr. Lecter says. "I apologise. It's not a day for darkness."

"I wouldn't mind changing the subject," Steve says. "So, what do you like to barbecue?"

"Meat, mostly," Dr. Lecter says. "Marinaded or rubbed with spices, or as a kabob mixed with vegetables. I have one of those big globular barbecue grills that are very pleasant to work with."

"That sounds delicious. Are you a beef guy or a pork guy?"

"I appreciate many kinds of meat," Dr. Lecter says. "Some rare and unusual meats can be quite interesting barbecued. Did you ever have emu, or kangaroo?"

[[meta: while the good doctor is completely deapan, the mun half-dies snerking with amusement at steve's innocent tags!]]

"Never," Steve says, shaking his head. "The most exotic I've gotten is lamb. There are probably lots of places in the city to try out exotic stuff, like you said, but I haven't found them yet."

"In New York city," Dr. Lecter says, "you can find all the food in the world. Lamb isn't very exotic by my books. It doesn't have to be imported, and it's neither rare not overly pricey, like buffalo."
